Mini Apple Pie

INGREDIENTS:

For Tart–

  • 165g all purpose flour (maida)
  • 115g cold butter (small cubes)
  • 1.5 tbsp powdered sugar
  • 1.5 tbsp cold water

For Filling–

  • 250g chopped fresh apples
  • 35g brown sugar
  • 1 tbsp. cornflour
  • 1/2 tsp. cinnamon powder
  • 1 tsp. lemon juice
  • 1 tsp. fresh lemon/orange zest
  • salt as per taste

METHOD:

For Tart–

  1. In a bowl add maida, sugar and butter
  2. Rub the butter and flour together with your fingers
  3. Mix into a crumbly texture
  4. Add 1.5 tbsp. ice-cold water
  5. Knead to form the tart dough
  6. Cover the dough using a plastic wrap. Refrigerate for 30-40mins
  7. Roll the dough to about 5-6mm thick
  8. Line the dough over individual tart mould
  9. Gently press around the edges of the tin and remove the excess dough
  10. Lightly prick the tart with a fork (refer video)

For Filling–

  1. In a bowl, add all the ingredients. Mix well and coat the apples evenly
  2. Fill the tarts with the apple filling
  3. Use the remaining tart dough to decorate the pie
  4. Bake at 180C for 40-50mins
  5. Serve with vanilla ice-cream and honey
