INGREDIENTS:
- 1 cup Raw Rice
- 1 cup Boiled Rajma
- 1/2 cup Sliced Capsicum
- 1/2 cup Sliced Onions
- 1/2 cup Boiled Corn
- 4-5 Tomatoes puree
- 1 tbsp chilli flakes
- 1 tbsp mixed herbs
- 1- 2 green chillies
- 2 tbsp Garlic crushed
METHOD:
- Heat 2-3 tbsp of oil in a pan.
- Add raw rice and roast it properly for about 5 to 7 minutes.(very important step)
- Add garlic, green chillies and saute for a minute
- Now add onions, capsicum and corn and saute for another minute
- Add tomato puree and about 1 cup of water
- Add salt as per taste
- Add boiled rajma,mixed herbs and chilli flakes
- Cover with a lid and cook it on low flame till rice cooks
- Serve hot Mexican Rice with Enchiladas or any other Mexican gravy.
