Mexican Rice

INGREDIENTS:

  • 1 cup Raw Rice
  • 1 cup Boiled Rajma
  • 1/2 cup Sliced Capsicum
  • 1/2 cup Sliced Onions
  • 1/2 cup Boiled Corn
  • 4-5 Tomatoes puree
  • 1 tbsp chilli flakes
  • 1 tbsp mixed herbs
  • 1- 2 green chillies
  • 2 tbsp Garlic crushed

METHOD:

  1. Heat 2-3 tbsp of oil in a pan.
  2. Add raw rice and roast it properly for about 5 to 7 minutes.(very important step)
  3. Add garlic, green chillies and saute for a minute
  4. Now add onions, capsicum and corn and saute for another minute
  5. Add tomato puree and about 1 cup of water
  6. Add salt as per taste
  7. Add boiled rajma,mixed herbs and chilli flakes
  8. Cover with a lid and cook it on low flame till rice cooks
  9. Serve hot Mexican Rice with Enchiladas or any other Mexican gravy.
