Smoked Veg Protein Sandwich

INGREDIENTS:

  • 15-20 Spinach leaves blanched & chopped
  • 1/2 cup boiled corn
  • 1 medium capsicum chopped
  • 3/4 cup small paneer cubes
  • finely chopped coriander leaves
  • sliced black olives
  • finely chopped mint leaves
  • 1/4 cup hung curd
  • 1/2 tbsp. chilli flakes
  • 1 tbsp. mixed herbs
  • salt (if required)
  • Live Charcoal + Ghee
  • Bread Slices for Sandwich

METHOD:

  1. In a bowl, mix all the vegetables together (paneer, corn, coriander leaves, olives, spinach, capsicum, mint leaves)
  2. Next add hung curd, chilli flakes and mixed herbs
  3. In a small bowl, add live charcoal and ghee. Keep the katori inside the bowl (Refer the video)
  4. Keep covered for 2-3 minutes to impart smoky flavour into the mixture
  5. Apply butter to both sides of the bread slices
  6. Spoon some mixture between two breads to form a sandwich
  7. Toast it using a sandwich maker
  8. Serve hot
