Roasted Garlic & Chilli Dip

INGREDIENTS:

For Garlic-Chilli Oil —

  • 5-6 garlic cloves
  • 2-3 green chillies
  • 1/2 tbsp. mustard seeds
  • 1/3 cup oil (80ml)

For Dip —

  • 1 cup hung curd
  • 1 tbsp. sugar
  • 1 tbsp. lemon juice
  • 2 tsp. red chilli powder
  • blended paste
  • salt and pepper as per taste
  • garlic-chilli oil

METHOD:

For Garlic-Chilli Oil —

  1. In a hot pan, dry roast garlic cloves, green chillies and mustard seeds
  2. Once roasted, turn off the heat and add the oil
  3. Let it cool (the flavour infuses in the oil)
  4. After it cools, strain the oil
  5. Blend the roasted garlic, chilli and mustard seeds to make a paste (blended paste)

For Dip —

  1. In bowl add hung curd, sugar, lemon juice, red chilli powder, salt, pepper and blended paste. Mix well
  2. Add in the oil in 2-3 parts
  3. Mix all together to make the dip
